Do you have those days/weeks etc when you are getting lots done, but feel like you were getting nowhere in a hurry? Last week, it felt like I was playing catch up all week. It didn't help that I also had a cold, which was probably slowing me down a bit.
I did gather enough energy to make a canvas for my mum's neighbour. Herself and husband escaped their country of origin, to start a new life in Australia. She is not the first I had met that escaped from the same country. Through a friend I have also met two lovely young women restarting their lives here as well. To hear their stories of what they went through and what would have happened to them if they remained is heartbreaking and certainly opens your eyes to tolerance and acceptance. I sometimes think we take it for granted how blessed we are to live in a country that offers democracy, freedom of speech, religion and supports the rights of humans. Australia really is a lucky country, and this is where they can start over "living the dream".

Do you remember the humble pastie? I have found a recipe that turns the humble old pastie into a slab! That's right, a pastie slab!! For mums of fussy little eaters, the great thing about this recipe is that you can hide the vegetables! As my boys are older, I don't need to hide the vegies (except the mushrooms) Shhhh, don't tell Gabriel...
Another advantage is you can use whatever vegetables you have on hand.
Pastie Slab
Ingredients:
4 sheets puff pastry
1kg sausage mince
1 egg, beaten
1½ cups grated tasty cheese
Diced Vegetables*, as much or little as you like
*Vegetables I used: celery, potato, carrots, mushrooms, pumpkin, spring onion, brown onion, frozen peas and frozen corn kernels
Preheat oven to 180°C. Line a baking dish with baking paper.
Finely dice vegetables, or to hide them, blitz them in a blender and cook until tender. Allow to cool slightly.
In a bowl, mix vegetables, sausage mince and cheese until well combined.
Line the baking dish with 2 sheets of pastry, making sure it comes up to the sides of dish.
Pour in combined sausage, vegetable and cheese mixture and pat down with the back of a spoon to even out.
Top with remaining pastry and brush with beaten egg.
Cook for 40-45mins or until pastry is golden brown.
